Peach Butter:
4lbs peaches (skinned and cubed)
1/2 cup sugar
1/2 cup water
2Tbsp Lemon juice
Put peaches, water, and sugar in pot. Medium heat until boiling starts, then lower heat slightly. Boil for roughly 20 minutes or until peaches are tender stirring occasionally.
Add lemon juice. Stir
Blend peaches into a purée. (I used a regular blender- but you could use whatever you feel necessary)
Pour purée into a clean pit. Bring to a boil. Lower heat and cook gently. Stir frequently as it may scorch bottom of pot. Longer cooked- thicker it becomes. (I boiled mine for roughly 30 min)
At this point you can place in clean, sterile jars. You can let them cool completely and use them within 2 weeks. Or you can use the water bath method to can them, which is what I did. I processed mine for 20 min. (1/4 headspace)Peach Butter:
